Candied Jalapeño Pulled Pork Recipe

Ingredients:

  • 3-4 pounds boneless pork shoulder or pork butt

  • 1 cup candied jalapeños, chopped (adjust to your desired level of spiciness)

  • 1 medium onion, finely chopped

  • 4 cloves garlic, minced

  • 1 cup chicken broth

  • 1/4 cup apple cider vinegar

  • 1/4 cup brown sugar

  • 2 tablespoons chili powder

  • 1 tablespoon paprika

  • 1 teaspoon ground cumin

  • 1/2 teaspoon salt (adjust to taste)

  • 1/4 teaspoon black pepper

  • Hamburger buns or sandwich rolls for serving

  • Coleslaw (optional, for topping)

Instructions:

1. Prepare the Pork:

  • Trim any excess fat from the pork shoulder or pork butt and cut it into smaller chunks if needed to fit into your slow cooker or oven.

2. Mix the Sauce:

  • In a mixing bowl, combine the chopped candied jalapeños, finely chopped onion, minced garlic, chicken broth, apple cider vinegar, brown sugar, chili powder, paprika, ground cumin, salt, and black pepper. Mix until the ingredients are well combined.

3. Slow Cooker Method:

  • Place the pork chunks in a slow cooker.

  • Pour the sauce mixture over the pork.

  • Cover and cook on low heat for 6-8 hours, or until the pork is tender and can be easily shredded with a fork.

4. Oven Method:

  • Preheat your oven to 325°F (163°C).

  • Place the pork chunks in a large ovenproof Dutch oven or roasting pan.

  • Pour the sauce mixture over the pork.

  • Cover the Dutch oven or roasting pan with a lid or aluminum foil.

  • Bake in the preheated oven for 4-6 hours, or until the pork is tender and can be easily shredded with a fork.

5. Shred the Pork:

  • Once the pork is cooked and tender, remove it from the slow cooker or oven.

  • Use two forks to shred the pork into smaller pieces.

6. Sauce Reduction (Optional):

  • If you prefer a thicker sauce, you can transfer the sauce from the slow cooker or roasting pan to a saucepan and simmer it over medium heat until it reduces to your desired consistency.

7. Serve:

  • Serve the Candied Jalapeño Pulled Pork on hamburger buns or sandwich rolls.
