Huevos Rancheros with Candied Jalapeños Recipe

Ingredients:
For the Ranchero Sauce:
2 tablespoons vegetable oil
1 small onion, finely chopped

For the Huevos Rancheros:
4 large eggs
4 small corn tortillas
1 cup refried beans
1 cup shredded Monterey Jack or cheddar cheese

Lime wedges, for garnish
Instructions:
1. Prepare the Ranchero Sauce:
In a saucepan, heat the vegetable oil over medium heat.
Add the finely chopped onion and sauté until translucent, about 3-4 minutes.
Stir in the minced garlic, ground cumin, and chili powder. Cook for an additional 1-2 minutes until fragrant.
Pour in the crushed tomatoes and stir to combine. Season with salt and pepper to taste.
Simmer the sauce for about 10 minutes, allowing it to thicken. Stir in the chopped candied jalapeños for a sweet and spicy kick. Adjust the spiciness to your preference by adding more or fewer candied jalapeños.
2. Prepare the Huevos Rancheros:
Warm the corn tortillas in a dry skillet or in the oven until they are soft and pliable.
