Huevos Rancheros with Candied Jalapeños Recipe

Ingredients:

For the Ranchero Sauce:

  • 2 tablespoons vegetable oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 can (14 ounces) crushed tomatoes

  • 1 teaspoon ground cumin

  • 1 teaspoon chili powder

  • Salt and pepper to taste

  • 1/4 cup candied jalapeños, chopped (adjust to your desired level of spiciness)

For the Huevos Rancheros:

  • 4 large eggs

  • 4 small corn tortillas

  • 1 cup refried beans

  • 1 cup shredded Monterey Jack or cheddar cheese

  • Fresh cilantro leaves, for garnish

  • Sliced avocado, for garnish

  • Lime wedges, for garnish

Instructions:

1. Prepare the Ranchero Sauce:

  • In a saucepan, heat the vegetable oil over medium heat.

  • Add the finely chopped onion and sauté until translucent, about 3-4 minutes.

  • Stir in the minced garlic, ground cumin, and chili powder. Cook for an additional 1-2 minutes until fragrant.

  • Pour in the crushed tomatoes and stir to combine. Season with salt and pepper to taste.

  • Simmer the sauce for about 10 minutes, allowing it to thicken. Stir in the chopped candied jalapeños for a sweet and spicy kick. Adjust the spiciness to your preference by adding more or fewer candied jalapeños.

2. Prepare the Huevos Rancheros:

  • Warm the corn tortillas in a dry skillet or in the oven until they are soft and pliable.

  • In another skillet, heat the refried beans over low heat until they are warmed through.

  • In a separate non-stick skillet, fry the eggs to your desired level of doneness (sunny-side up or over-easy).

3. Assemble the Dish:

  • To assemble each Huevos Rancheros plate, place a warm tortilla on a serving plate.

  • Spread a generous spoonful of refried beans on top of the tortilla.

  • Place a fried egg on the beans.

  • Spoon the ranchero sauce generously over the egg.

  • Sprinkle shredded cheese on top of the sauce, allowing it to melt slightly.

  • Garnish with fresh cilantro leaves and slices of avocado.

  • Serve with lime wedges on the side.
